Bra Tenero Dop

One name, two different cheeses. Indeed, the Bra Tenero DOP differs greatly from the “hardened” version of the same name. In fact, it is a soft-pasted cheese with accentuated irregular eyes, created to be consumed after a brief period of ageing. Its delicate notes are of milk, yoghurt and melted butter. We only produce this cheese with whole milk, selected exclusively from amongst the best farms in the area and being strictly raw.

We choose to age our forms of Bra Tenero DOP in the grotto for no less than 60 days. Always serve at room temperature. Store in a cool location. Once cut, it is important that the paste does not dry out.

Ingredients: raw cow’s milk, salt, rennet.
