Produced throughout the year with our raw mountain milk obtained only from cows fed with top-quality local hay, through the traditional and laborious working that involves strictly manual processing. Its distinctive features are the candid white colour of its paste and the delicacy of its aromatic lactic and vegetal notes, accompanied by a pleasant acidity that leaves the mouth perfectly clean. Its particular granular and tender consistency combined with its unmistakable organoleptic equilibrium ensures it is appreciated by all palates, and suitable for a range of uses.

Our choice is to age the forms of our Castelmagno DOP Prodotto della Montagna for at least 120 days.

Always serve at room temperature. It is also great for use in cooking, for the preparation of first courses, in accordance with the Piedmont tradition, or light fondues to accompany cooked meat and vegetable dishes. Store in a cool location. Once cut, it can be stored in vacuum-sealed packages.

Ingredients: raw cow’s milk, salt, rennet.
